  • 1 1/2 cups egg whites, at room temperature (from about 1 dozen eggs)
  • 1 1/4 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 2 -3 teaspoons hot water
  • 1 tablespoon instant coffee or 1 tablespoon espresso
  • 1 1/8 cups sifted cake flour
  • 1 teaspoon pure vanilla extract


  • 1/4 cup espresso
  • 8 ounces confectioners' sugar, sifted


  • Serving Suggestion: Vanilla frozen yogurt
  • Make the Cake: Preheat the oven to 375 degrees F.
  • In a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg whites until foamy. Add the cream of tartar and salt and continue whipping until soft peaks form.
