The Recipe How-To

Mixing the Cake Batter

Before starting, preheat the oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.

To make the cake batter, cream together 1 cup (2 sticks) unsalted butter, 1 ¼ cups granulated sugar, and 1 tsp vanilla extract in a large mixing bowl.

Once combined, gently add in 4 eggs, one at a time. Beat until the mixture is creamy and light.

In another smaller bowl, mix together 3 cups all-purpose flour, 1 tsp baking soda, 2 tsp baking powder, and ½ tsp salt. Add this dry mixture into the egg-butter mixture in two parts while pouring in 1 ½ cups milk simultaneously as you mix with an electric mixer on low speed until everything is just blended together.

Making the Strawberry-Cream Cheese Filling

In a medium-sized mixing bowl, cream together 8 ounces softened cream cheese and ½ cup granulated sugar until smooth.

Add in 1 cup chopped fresh strawberries, mixing it until well combined to create a pinkish strawberry and cream mixture.

Assembling and Baking Your Cake

Start off by pouring half of the cake batter prepared earlier into your greased baking dish. Use a spoon or a spatula to smoothen it out inside, getting rid of any excess bubbles that may have formed on top.

Next, add dollops of the fresh strawberry-cream cheese filling on topcake using a tablespoon or any other utensil to distribute it evenly. Then pour remaining batter over the filling layer.

Now sprinkle the crumb topping over everything before placing in the oven for 45-50 minutes or until it becomes golden brown. You can insert a toothpick to test whether it’s done or not.

Making Your Crumb Topping

In a medium-sized mixing bowl, use your hands literally and mix together 1 cup softened unsalted butter with 2 cups all-purpose flour, 1 cup brown sugar, 1 tsp cinnamon, and ¾ cup fresh strawberries cut into small bite-sized chunks. Keep mixing everything using your fingers until you achieve a crumbly texture.

Take this crumb mixture and sprinkle it on top of the filling in the baking dish. Be sure to cover evenly while making sure that it stays as crumbly as you can make it.

Substitutions and Variations

Let’s get creative with this fresh strawberry cream cheese coffee cake recipe! Here are some substitution and variation ideas to suit your taste buds:

– Substitute the fresh strawberries with other in-season fruits like blueberries, raspberries or peaches.

– Swap the cream cheese filling with homemade strawberry jam or even lemon curd for a tangy twist.

– Make it gluten-free by replacing the all-purpose flour with a gluten-free flour blend or almond flour.

– For a dairy-free version, use vegan butter and substitute the cream cheese with dairy-free cream cheese.

– Add a crunchy texture to this coffee cake by making a streusel topping instead of the crumb topping. Use brown sugar, flour, cinnamon, and cold cut butter chunks to create this nutty deliciousness.

– If you love nuts, add some chopped walnuts or pecans to the crumb topping for an extra crunch factor.

– Turn it into a bundt cake by adding 1 cup of sour cream to the cake ingredients. This will create a denser texture that is perfect for marbled cakes. Swirl the fresh strawberry cream cheese filling throughout the batter and top it off with a decadent strawberry crumble topping.

The possibilities are endless with this versatile recipe! Don’t hesitate to experiment and find your perfect version of this incredible dessert or breakfast cake.

Make-Ahead, Storing and Reheating

The ultimate breakfast indulgence.

This fresh strawberry cream cheese coffee cake recipe can actually taste even better after being stored for a day or two, making it an excellent choice for those who prefer to prepare their dishes in advance. Once the cake has cooled completely, you can easily store it in an airtight container. It is best kept at room temperature for up to 2 days, but if you want to keep it fresh longer, you can put it in the refrigerator for up to 4 days.

If you plan to keep it in the refrigerator, just make sure you allow enough time for the cake to come down to room temperature before serving, as this will help bring out its flavor and texture. You can either take the cake out of the fridge and let it sit on the counter for around an hour, or if you are pressed for time, you can pop it in the oven for 10-12 minutes at 350F (175C) until it heats up.

This recipe is also ideal for freezing since it takes little effort to prepare a few batches at once. After the cake cools, you can wrap it well with plastic wrap or foil, and then place it inside a large freezer bag. Be sure to label and date the bag, and then freeze for up to 3 months.

Once ready to serve your coffee cake again after freezing or refrigerating, you can simply warm it in the oven at 350F (175C) for around 10-15 minutes until heated through. Alternatively, you may also microwave each slice individually in a microwave-safe dish for 20-30 seconds until heated through. However initially served or reheated, remember that this delicious fresh strawberry cream cheese coffee cake – with its moist crumble topping and creamy cheese filling – is best enjoyed with a hot cup of coffee or tea any time of day!

In order to create a perfect fresh strawberry cream cheese coffee cake, there are a few things to keep in mind. Here are some tips that’ll help you achieve the best results every time:

1. Always use fresh ingredients: As this recipe calls for fresh strawberries and cream cheese, it is important to make sure that the ingredients are not expired or gone bad.

2. Measure ingredients correctly: Use measuring cups and spoons to ensure you add the right quantities of each ingredient. Adding too much flour, for example, can make your cake dense and dry.

3. Preheat your oven: Ensure that your oven is preheated to 375°F prior to baking. This ensures even baking and helps the cake rise properly.

4. Don’t overmix: When combining dry and liquid ingredients, do not overmix. Overmixing can result in a tougher texture for the cake.

5. Cream the butter and cream cheese together: For the best results, make sure that your butter and cream cheese are softened before mixing them together. The resulting mixture should be smooth and creamy which aids in creating a tender crumb on your cake.

6. Add strawberry filling evenly: When adding the strawberry filling to the batter, make sure to add it evenly across the batter so that every slice of cake has a good amount of strawberries throughout it.

7. Use parchment paper: To prevent sticking in the pan, line your baking pan with parchment paper before pouring in the batter.

By following these tips carefully, you’ll be able to master the recipe easily and create a perfect fresh strawberry cream cheese coffee cake that’s bound to impress anyone who tries it!

Fresh Strawberry Cream Cheese Coffee Cake

Fresh Strawberry Cream Cheese Coffee Cake Recipe

From a recipe handout I got when I went picking strawberries. Moist and delicious! It taste like a strawberry cream cheese danish. It's easier than some recipes since the cream cheese is mixed into the batter and not used as a separate layer. You could also serve it as a dessert with ice cream on top like a cobbler.

  • 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups strawberries, sliced (I use entire 16 oz. container)
  • 1/4 cup brown sugar

Instructions

  • Preheat oven to 350°F.
  • Combine cream cheese, butter and sugar. Beat until light and fluffy.
  • Stir in milk, eggs and vanilla.
  • Sift together flour, baking powder, baking soda and salt; add to cheese mixture and mix until smooth.
  • Spread half the batter in a greased and floured 13x9 inch baking pan. (The batter is VERY thick. It works best to put little blobs of it across the whole pan and then spread them with a knife. One reviewer says they used a 8x8 inch pan, but I haven't so I can't vouch for how it will turn out or how long you need to bake it.).
  • Spread berries evenly over batter. Dot remaining batter over berries. Mix brown sugar and nuts; sprinkle evenly over cake.
  • Bake 40 minutes. Serve warm or cold.
