Now that you have all the necessary ingredients gathered, let’s get down to business and start making this delectable Mocha Yogurt Coffee Cake.

Step 1: Preheat the oven to 350°F (180°C)

This is a crucial step in the baking process since it allows the oven to reach the correct temperature before you add your cake batter. This ensures even baking and a perfectly cooked cake with a soft and tender crumb.

Step 2: Prepare the cake pan

Butter a 9×13-inch baking pan and sprinkle it with flour, making sure to shake off any excess. Alternatively, you can use baking spray or parchment paper to prevent the cake from sticking to the pan.

Step 3: Mix the dry ingredients

In a medium-sized mixing bowl, whisk together 1 ¼ cups of all-purpose flour, ½ cup unsweetened cocoa powder, 1 tablespoon of instant espresso coffee or coffee powder, 1 teaspoon ground cinnamon, 1 teaspoon baking soda, and 1 teaspoon baking powder until well combined. Set aside.

Step 4: Cream the butter and sugar

Using an electric mixer, on medium-high speed, beat 1 cup unsalted butter at room temperature and 1 ¾ cups of granulated sugar until light and fluffy. This should take roughly 3-4 minutes. Remember, this step is crucial as it adds volume and airiness to your cake’s texture.

Step 5: Add eggs and vanilla extract

Reduce mixer speed to medium and add in 4 large eggs one at a time, making sure they’re fully incorporated before adding the next egg. Add in 1 tablespoon of vanilla extract and continue beating till everything is well combined.

Step 6: Alternate adding the dry ingredients and yogurt

Add in half of your bowl of mixed dry ingredients from Step 3 into the mixer with the butter, sugar, and egg mixture. Mix on low speed until just combined. Now add 1 ½ cups of plain yogurt and mix again. Then add in the remaining dry ingredients and continue to mix until just combined, making sure not to overmix.

Step 7: Bake and cool

Pour the cake batter into the prepared pan, smoothing out the top with a spatula. Bake the cake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and allow to cool completely before serving.

Congratulations! You have made yourself an indulgent Mocha Yogurt Coffee Cake that is perfect for starting your day off right or enjoying as a dessert.

Tips for Perfect Results

A scrumptious treat for both coffee and chocolate lovers.
A scrumptious treat for both coffee and chocolate lovers.

When it comes to baking a Mocha Yogurt Coffee Cake, there are a few tips that can make all the difference in achieving a perfect result. Here are some helpful tips:

Firstly, make sure that all of your cake ingredients are at room temperature. This includes the eggs, yogurt, and butter. Cold ingredients can cause the batter to separate, resulting in a less than perfect texture.

Secondly, be sure to thoroughly mix the instant coffee crystals into the batter until they have completely dissolved. Lumps of coffee will not only affect the flavor but also give an uneven texture.

Thirdly, take care when measuring your flour since using too much flour can result in a dense and dry cake. The best way to measure flour is by spooning it into a measuring cup and leveling off with a knife.

Fourthly, always use fresh baking powder and baking soda. These ingredients lose their potency over time, and expired products will cause your cake to fall flat or taste bitter.

Fifthly, don’t overmix the batter. Overmixing can lead to tough, chewy cakes rather than light and fluffy ones. Use a spatula to fold in the last of your dry ingredients if necessary.

Lastly, once your cake is fully baked, allow it to cool completely before slicing and serving. This will allow the flavors to fully develop and result in a more delicious and moist cake.

By following these tips, you’ll be able to create the best possible Mocha Yogurt Coffee Cake that you’ll surely enjoy with every bite!

In conclusion, the Mocha Yogurt Coffee Cake recipe is a must-try for coffee and cake lovers alike. Whether you are a seasoned baker or new to the kitchen, this recipe is easy to follow and will reward you with a delicious and moist cake that is sure to impress.
