Now that you have gathered all the necessary ingredients, it’s time to put them all together and create this delicious rhubarb coffee cake!

Step 1: Preheat Your Oven

Begin by preheating your oven to 350°F (175°C).

Step 2: Prepare the Rhubarb

It is important that the rhubarb is cut into small pieces so that it bakes evenly. Rinse and chop 2 cups of fresh rhubarb into small 1/4-inch pieces. If you do not have fresh rhubarb available, frozen rhubarb works just as well.

Step 3: Grease a Pan

Grease a 9-inch square baking pan with butter or cooking spray.

Step 4: Combine Dry Ingredients

Now, whisk together 2 cups of all-purpose flour, 1 tsp of cinnamon, 1 tsp of baking soda and 1/2 tsp of salt in a mixing bowl.

Step 5: Combine Wet Ingredients

In another mixing bowl, mix together 1 cup of white sugar, 1/2 cup of brown sugar, and one large egg until the mixture is smooth. Slowly add in 1 cup buttermilk along with 1 tsp vanilla extract. Mix until properly combined.

Step 6: Add In The Dry Ingredients

Stir in the dry ingredients with the wet ingredients until it forms a smooth batter.

Step 7: Fold in Rhubarb Mixture

Using a spatula, fold in the chopped rhubarb mixture into the batter. Make sure the rhubarb is dispersed evenly throughout the batter. Add in a handful of raisins if desired.

Step 8: Pour Mixture Into Pan

Pour out the batter into your greased pan and spread it out evenly.

Step 9: Make Topping

In another bowl, mix 1/4 cup of softened butter, 1/2 cup of brown sugar, and 1 tsp of cinnamon. Use a fork to create a crumbly mixture.

Step 10: Add Topping To Cake And Bake

Sprinkle the topping mixture over the batter evenly. Place your pan into your preheated oven and bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before serving.

Enjoy your delicious rhubarb coffee cake with a cup of hot coffee!

Tips for Perfect Results

Who needs icing when you have rhubarb streusel?
Who needs icing when you have rhubarb streusel?

To guarantee the cake has the perfect texture and flavor, here are a few tips I can offer:

First, when making any coffee cake or cake recipe, always make sure your butter and sugar are creamed well. This is an essential step to ensure the texture of the cake is light and fluffy.

Second, be sure to mix the dry ingredients thoroughly before adding them to the batter. You want to make sure that the baking soda is evenly distributed throughout the flour so that you don’t end up with pockets of bitterness in your final product.

Third, make sure you’re using fresh rhubarb. If the rhubarb is too old, it can be stringy and tough, which will ruin the texture of your coffee cake.

Fourth, don’t be afraid to get creative with the recipe! Try adding different fruits like strawberries or blueberries to create new flavor combinations.

Fifth, for an added crunch, try topping your coffee cake with a streusel or crumble made from brown sugar and butter.

And finally, if you want to take your coffee cake to the next level, consider serving it warm with a dollop of sour cream or whipped cream. It adds a delicious tanginess to complement the sweetness of the cake.

FAQ

Before we conclude this recipe, I want to address some frequently asked questions that may arise during the preparation of Shawna’s Rhubarb Coffee Cake. These questions will provide you with the answers you need to make sure that you get perfect results every single time. So, let’s go through these questions one by one.

Does traditional coffee cake have coffee in it?

Although coffee cake has the word “coffee” in its name, it is not necessarily made with coffee. The name simply suggests that it is a perfect accompaniment to a cup of coffee, whether as a snack, breakfast, or brunch item. However, some variations of coffee cake may include espresso powder to give it a coffee flavor. Nonetheless, not all coffee cakes contain coffee in their ingredients.

Why is it called a coffee cake muffin?

The term “coffee cake” might mislead you into thinking that coffee is one of the ingredients used to make it, but that’s not the case at all! The classic American coffee cake is made with a pound cake base and is typically layered with cinnamon and streusel. These muffins are simply a smaller version of that iconic cake, and they make an excellent accompaniment to a warm cup of coffee or foamy latte.

What makes something coffee cake?

When it comes to coffee cake or kaffekuchen, expect a single layer cake topped with streusel made from sugar, flour and butter. The cake itself will give you a sweet and cinnamon-infused flavor, plus some variations of it come with fruit such as blueberries, and the streusel can also be placed as filling in the middle of the cake.

Bottom Line

In conclusion, Shawna’s Rhubarb Coffee Cake is undoubtedly one of the easiest and most enjoyable cake recipes you’ll make. It has a unique texture and rich cinnamon flavor that is well paired with coffee or tea for breakfast or served as a dessert.

We hope that this recipe will inspire you to try new ingredients in your baking and create your own variations. Remember to have fun in the kitchen and don’t be afraid to experiment with different combinations of ingredients.
