  • 3 tablespoons margarine or 3 tablespoons butter
  • 2 tablespoons dark brown sugar (I use light sometimes)
  • 1/2 cup shredded coconut
  • 1/3 cup pineapple tidbits

  • 3/4 teaspoon salt

  • 1/4 cup warm water (for yeast, so NOT hot)

  • Stir in lukewarm milk mixture.
  • Add egg, vanilla and flour.
  • Stir until well blended, about 1 minute. Turn batter into the prepared pan of the brown sugar mixture.
  • Let rise in a warm place until doubled in bulk, approx 1 hour and 15m.
  • Bake at 375 for about 35m.
  • Turn out of pan immediately.
