Step 1: Cream Together Butter and Sugars

In a large mixing bowl or stand mixer, cream together 1/2 cup of softened unsalted butter, 1/2 cup of granulated sugar, and 1/2 cup of brown sugar until it’s pale and fluffy. This should take about 2-3 minutes.

Step 2: Add Eggs, Coffee, and Vanilla

Next, add one egg, one teaspoon of vanilla extract, and one tablespoon of instant coffee granules (dissolved in one or two tablespoons of warm water). Mix well until all ingredients are fully combined.

Step 3: Sift Together Dry Ingredients

In a separate medium-sized mixing bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt. Then add one tablespoon of instant coffee granules and one teaspoon of ground cinnamon. Mix everything well.

Step 4: Combine Wet And Dry Ingredients

Add the sifted dry ingredients gradually into the wet mixture. Mix on low speed just until the flour disappears.

Step 6: Scoop Dough Onto Cookie Sheet

Use a small cookie scoop or a spoon to portion out balls of dough onto an ungreased baking sheet lined with parchment paper. Space them about two inches apart to allow room for spreading.

Step 7: Bake The Cookies

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips for Perfect Results

When making coffee cookies, follow these tips to ensure perfect results every time.

First and foremost, make sure that all ingredients are at room temperature before starting. This will help them incorporate better and lead to a more uniform texture. If you forgot to take out the butter or egg, don’t worry. You can quickly warm them up in the microwave or by placing them in a bowl of warm water for a few minutes.

When measuring flour, use a spoon to scoop it into the measuring cup and level off with a knife. This will give you a more accurate measurement and ensure that your cookies aren’t dry or crumbly.

If using instant coffee granules, dissolve them in hot water before adding to the dough. This will prevent any undissolved granules from creating pockets of bitterness in your cookies.

To avoid cookies spreading too much during baking, chill the dough for at least 30 minutes before scooping it onto the baking sheet. Chilled dough also creates a more chewy texture, which many people love in their cookies.

Consider adding chocolate chips or other mix-ins to your coffee cookies for added texture and flavor. But be careful not to overload the dough with too many additions, as this can alter the overall structure of the cookie.

If you want to make mocha cookies, simply substitute some of the flour with cocoa powder and add espresso powder or strong brewed coffee along with the instant coffee granules. Or try rolling the dough in cinnamon sugar before baking for cinnamon-coffee flavored cookies.

Finally, don’t overbake your coffee cookies! They should be soft and chewy rather than hard and crunchy. Start checking on them a couple of minutes before the recommended baking time and remove from the oven as soon as they start turning golden-brown around the edges.

With these tips in mind, you’ll be able to make delicious coffee cookies every time!

In conclusion, this coffee cookie recipe is a must-try for all coffee lovers and cookie enthusiasts. With its chewy texture, delicious coffee flavor, and chocolate chips, it’s an irresistible treat that will leave you wanting more.
