The Recipe How-To

Preheat the Oven and Prepare the Pan

Before anything else, I preheat the oven to 350°F. Meanwhile, I prepare a 9-inch loaf pan by greasing it with butter and lining it with parchment paper.

Mix the Dry Ingredients

In a bowl, I sift together 1 ½ cups of all-purpose flour, 1/3 cup of unsweetened cocoa powder, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and a pinch of salt. This ensures that there are no lumps in my dry ingredients and my cake will rise evenly.

Beat the Butter and Sugar

Next, I get another bowl and mix 1 stick (½ cup) of unsalted softened butter with ¾ cup of granulated sugar using an electric mixer until light and fluffy. This usually takes about 2-3 minutes on medium speed.

Add the Hazelnut Spread, Whiskey, and Coffee

Afterward, I add in ½ cup of hazelnut spread and mix it again to combine everything. Then, I mix in 1 tablespoon of whiskey to give it a nice aroma.

Lastly, I add 1/3 cup of strong black coffee + 1 tablespoon hot water to bring out the coffee flavor in the cake.

Mix in the Dry Ingredients

I slowly add in half of the sifted dry ingredients into the wet mixture while continuing to beat on low speed. Once incorporated, I pour in half of the remaining coffee mixture before adding in the rest of the dry ingredients. Finally, pour in the remaining coffee mixture into my batter.

Fold in Chocolate Chunks and Hazelnuts

Using a spatula or wooden spoon, I fold in around 1 cup coarsely chopped dark chocolate and around 125 g chopped roasted hazelnuts (keep some for toppings).

Bake and Cool the Cake

I pour the batter into the lined pan, spreading it evenly. Then, I sprinkle some chopped chocolate chunks and hazelnuts on top before popping it into the oven for about 50-55 minutes or until a cake tester comes out clean.

Once done, I transfer my cake onto a wire rack and leave it to cool in the pan for 5-10 minutes.

Don’t let a lack of ingredients prevent you from making this delicious Chocolate, Coffee & Hazelnut Loaf. Here are some substitutions and variations you can try:

– Instead of hazelnuts, you can use almonds or walnuts.

– If you don’t have strong black coffee, you can use instant coffee granules or espresso powder. Just dissolve 1 tablespoon of either in ½ cup of hot water.

– For a mocha hazelnut flavor, add 1 teaspoon of cocoa powder to the cake batter and mix until fully incorporated.

– You can swap out the hazelnut spread with peanut butter or Nutella.

– If you want to make this cake vegan, replace the butter with canola spread and use a vegan-friendly chocolate.

– Mix and match the recipe to your preference. Try adding a layer of hazelnut filling or frosting between the cake layers, or sprinkle some chopped chocolate hazelnuts on top for extra crunch.

Remember to adjust the measurements accordingly if making any substitutions or additions. Experiment and have fun!

Now that you’ve got all the ingredients and the recipe on hand, let me share with you some tips that will help you create a perfect Chocolate, Coffee & Hazelnut Loaf.

Firstly, make sure to chop your chocolate and hazelnuts coarsely. This will give the cake a nice texture and enhance the crunchiness factor. Plus, having larger pieces of chocolate and hazelnuts in your cake will create an irresistible burst of flavors.

Another important tip is to add hot coffee to your cake batter. This will help bring out the chocolate and coffee flavors more intensely. Make sure to use strong black coffee; this will prevent your cake from becoming too sweet.

When it comes to measuring out the ingredients, use a kitchen scale instead of measuring cups. Weighing out your ingredients accurately is crucial in baking, as it can affect the texture and consistency of your baked goods.

While baking this Chocolate, Coffee & Hazelnut Loaf, keep a close eye on it through the oven door. To prevent over-browning or burning, cover the top of your cake with aluminum foil if needed. Don’t worry if it takes a bit longer than expected to fully bake; just keep checking it every few minutes until it is ready.

Once your cake is baked, let it cool completely before slicing into it. This will allow the flavors to combine properly and result in a more satisfying taste.

Lastly, feel free to mix and match some of the recipe’s ingredients! Swap out dark chocolate for milk chocolate or try using different nuts like pecans or almonds. Get creative with your substitution ideas, but always make sure they complement one another.
