A recipe is only as good as the ingredients in it, and sometimes our kitchen cabinets don’t always have everything we need. Fear not! There are substitutions and variations you can make to still get that delicious coffee flavor in your cake.

First of all, don’t have instant coffee granules on hand? No problem! You can use brewed coffee instead – just make sure to reduce the amount of liquid in the recipe to account for the added liquid from the coffee. Alternatively, you could use espresso powder or instant espresso coffee for a stronger coffee flavor.

If you’re looking for a vegan option, substitute the eggs and butter with vegetable oil and nature yoke (1 tablespoon of flaxseed mixed with 3 tablespoons of water creates a vegan “egg”), respectively. You could also try using self-raising flour instead of all-purpose flour to make a quick coffee cake with less fuss.

Want to take your coffee cake to the next level? Add some whipped cream or whipped coffee on top for a decadent treat. Or try making a streusel topping by mixing brown sugar, flour, and butter for a crunchy and sweet addition.

Feeling experimental? Try adding some chocolate chips or nuts to your cake batter for added texture and flavor. Making a layer cake for a birthday celebration? Add some sour cream to keep the cake moist and add richness to the flavor.

So go ahead, get creative with your substitutions and variations! The possibilities are endless when it comes to baked goods, so don’t be afraid to switch up ingredients to make it your own.
