Step 1: Preheat the Oven

Before you begin mixing the ingredients, preheat the oven to 350°F. This will ensure that the oven is at the right temperature when it’s time to bake your cake.

Step 2: Mix Dry Ingredients

In a large mixing bowl, add 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon pumpkin pie spice. Mix well using a whisk.

Step 3: Mix Wet Ingredients

In another mixing bowl, mix 3/4 cup granulated sugar and 1/4 cup Splenda Granular until they are combined. Add 1/2 cup unsalted butter (or margarine), 2 teaspoons vanilla extract, and 2 eggs, then mix until smooth.

Step 4: Combine Wet and Dry Ingredients

Slowly add the dry ingredients to the wet mixture while mixing continuously. Add in 1/2 cup milk along with the raisins or chopped nuts if desired until all ingredients are well combined.

Step 5: Pour Into Baking Pan

Pour your batter into a greased 9-inch pan or bundt cake pan. Spread it evenly so that it will bake consistently.

Step 6: Bake

Put your cake in the preheated oven and bake for about 35-40 minutes. The cake should be golden brown on top and set in the center.

Step 7: Make The Cinnamon Glaze

While your cake is still baking, mix together 1 cup confectioners’ sugar, 1/2 teaspoon ground cinnamon, and 2 tablespoons milk in a mixing bowl. Whisk until it’s smooth and set aside.

Step 8: Glaze The Cake

Once the cake is ready, take it out of the oven and allow it to cool for 5-10 minutes. Then pour the cinnamon glaze on top of the cake while it’s still warm. You can also add a streusel topping or crisp topping, or use cream cheese frosting instead of the cinnamon glaze.

Substitutions and Variations

Start your day with a little spice.
Start your day with a little spice.

As a barista and avid baker, I know a thing or two about making substitutions and variations to recipes. So if you’re feeling adventurous or want to switch things up for this spiced coffee cake recipe, I’ve got you covered.

Firstly, if you don’t have all-purpose flour on hand, you can substitute it with whole wheat flour, which will add a nutty flavor and more fiber to the cake. You can also try using gluten-free flour if that’s your preference.

For those looking for a healthier option, try using Splenda granular instead of granulated sugar. It provides fewer calories and has less impact on blood sugar levels. You can also use honey in place of granulated sugar, which will give the cake a lovely sweetness and depth of flavor.

If you’re not a fan of raisins, you can swap them out for dried cranberries or cherries. The cinnamon glaze can also be substituted with a maple glaze. Simply whisk together confectioners’ sugar, unsalted butter, maple syrup, milk and vanilla extract until smooth.

If you love pumpkin pie spice like I do, adding some to the cake mix will give it an extra boost of flavor. On the other hand, if pumpkin pie spice isn’t your thing, then try using nutmeg or ground cloves instead.

Lastly, for an apple twist on this recipe, try substituting the raisins for diced apples and adding a cinnamon streusel topping to the cake before baking. You can even make an apple cinnamon swirl coffee cake by layering apple slices and cinnamon sugar between the layers of the batter.

In conclusion, there are plenty of substitutions and variations that can be made to this spiced coffee cake recipe to suit your preferences and taste buds. Don’t be afraid to experiment and have fun in the kitchen!

Serving and Pairing

A tantalizing treat for your taste buds.
A tantalizing treat for your taste buds.

Once you have baked and glazed your perfect spiced coffee cake, it is time to serve and enjoy your masterpiece. I recommend pairing it with hot coffee or tea, the classic beverage pairing for a cozy and indulgent breakfast or dessert.

The warm spices of cinnamon, nutmeg, and pumpkin pie spice in the cake make this coffee cake an amazing complement to any pumpkin spice latte or hot cider drink. Or if you prefer a sweeter drink option, try serving it alongside a maple latte.

If you are feeling adventurous, you can also experiment with ice cream combinations. A scoop of vanilla ice cream on top of a warm slice of spiced coffee cake is a match made in heaven. You can also try pairing it with other fall flavors such as apple or caramel ice cream.

For an extra touch of indulgence, top your spiced coffee cake with whipped cream or even drizzle some caramel sauce over the glaze. The possibilities are endless when it comes to serving and pairing this delicious cake.

No matter how you choose to enjoy it, this spiced coffee cake will quickly become a staple in your dessert recipe collection.

Make-Ahead, Storing and Reheating

The perfect pairing for your morning coffee.
The perfect pairing for your morning coffee.

As a barista, I understand the importance of being able to make coffee and pastries in advance, especially if you have a busy schedule. That’s why I want to highlight the make-ahead, storing, and reheating options for this spiced coffee cake with cinnamon glaze recipe.

Firstly, you can make the spiced coffee cake ahead of time and store it at room temperature for up to 2 days or in the refrigerator for up to 5 days. Allow it to cool completely on a wire rack before wrapping it tightly with plastic wrap. The cinnamon glaze can be kept separately in an airtight container in the refrigerator for up to 2 days.

When reheating the coffee cake, you have two options. The first option is to warm individual slices in the microwave for about 20-30 seconds until heated through. The second option is to reheat the entire cake by placing it in a preheated 350°F oven for about 10-15 minutes. This option will also give the cake a slightly crispy texture on top, which is always a plus!

If you want to freeze the coffee cake for later use, that’s also an option. Simply wrap it tightly with plastic wrap followed by a layer of aluminum foil before placing it in the freezer. It will keep well for about 3 months. When ready to enjoy, thaw it overnight in the refrigerator and then reheat following one of the methods mentioned above.

In conclusion, having make-ahead and storing options can come in handy when you crave something sweet but don’t have much time on hand. And when you do find time, this spiced coffee cake with cinnamon glaze is perfect for sharing with loved ones over a cup of hot coffee or tea!

1. Choose the Right Ingredients

The ingredients you use can make all the difference in creating the perfect spiced coffee cake. Make sure you use fresh and high-quality ingredients to get the best results. Using stale or low-quality ingredients may affect the taste and texture of your cake.

2. Don’t Overmix

When it comes to mixing the batter for your spiced coffee cake, less is more. Overmixing can cause your cake to become tough and dry. Mix until just combined and make sure to scrape down the sides of the bowl to ensure everything is properly mixed.

3. Preheat Your Oven

Preheating your oven before baking is essential in achieving even baking and ensuring that your Spiced Coffee Cake is cooked all the way through. Preheat your oven to 350°F about 15 minutes before baking.

4. Use an Oven Thermometer

Oven temperatures can vary significantly, which can affect your baking outcomes. Using an oven thermometer is highly recommended as it ensures that you bake at an accurate temperature and get consistent results every time.

5. Use a Non-Stick Baking Pan

Using a non-stick baking pan helps to prevent sticking, which can help maintain the integrity of your Spiced Coffee Cake when transferring it from the pan onto a serving platter.

6. Test for Doneness

To determine whether your Spiced Coffee Cake is ready, insert a toothpick into the center of the cake; if it comes out clean, then your cake is baked perfectly.

7. Let Cool Before Glazing

It’s essential to let your Spiced Coffee Cake cool completely before applying any glaze. If the cake is still warm, the glaze will melt and not set, which can cause it to run off the cake and make a mess.
